With the natural process, also known as dried, the coffee cherries are spread out on raised surfaces and sun dried for an average of 30 days. After drying, the exterior layers of fruit are removed. The fermentation process occurs inside the fruit mucilage surrounding the coffee bean. Coffees processed using this method are noticeably fruity, winey, sweet, and have a syrupy chocolate characteristic.
