STORY
The initiative to protect the water spring in Santa Bárbara began when Fidel Paz acquired and fenced a strip of land, safeguarding this crucial natural resource. This marked the early beginnings of Finca El Garrote. The effort not only benefited the environment but also ensured the long-term viability of coffee farming in the area. Healthy ecosystems lead to better coffee crops, supporting farmers' livelihoods and securing the future of the coffee community in specialty coffee production.
Over the years, with the suggestion from one of the prestigious producers supplying parchment to Beneficio San Vicente, Fidel Paz planted 500 coffee trees at Finca El Garrote using leftover trees from his nursery. This step not only reinforced the farm's environmental mission but also provided a reason to visit the protected area.
This social and environmental initiative helped create a more sustainable environment and contributed to the growth of the coffee community in Santa Bárbara, as the water springs remain protected.
