Story

Tomás was born on july 15, 1987 in La Naranja village of the district Coipa – Cajamarca region. He lives with his wife and two children who are in primary school. His whole family is involved in the production of special coffees. Tomas is a coffee producer who has been improving year after year, participating in different competitions in the region and nationally, getting good results. Tomas is fond of growing orchids of different varieties, he has a very beautiful little garden. FARM NAME : EL NISPERO (2HAS) & EL CEDRO (2 HAS) VARIETIES : YELLOW CATURRA (EL CEDRO-1HA) TYPICA (EL NISPERO-1HA) BOURBON (EL CEDRO-1HA) GEISHA (EL NÍSPERO-1HA) ALTITUDE : 1850 MASL HARVEST SEASON : JULY-NOVEMBER ABOUT THE LOT : Tomas picks the ripe cherries (yellow color) during the day with his wife’s help, then he washed the ripe cherries with water and he lets it drain for two hours, then Tomas puts the cleaned cherries inside barrels to ferment them for 48 hours under shade at a temperature of 14-16 C°, after the first fermentation, he pulps them in a small machine and he puts it back inside the barrels for 48 hours more, at the end of the double fermentation, Tomas washes three times until making sure that there is no presence of mucilage, after which he lets it rest for 2-3 hours until making sure that there is no presence of water to transfer to the solar dryer for a period of time 20-25 days. El Cedro is the name of the farm where this variety was cultivated, the trees are 4 years old, last year was the first harvest for this coffee, the Cedar is a very common wood tree in production areas that are growed to shade the coffee trees.
