Ethiopia Guji Gr 2 Washed – is a delicate specialty coffee with tea like characteristics, citric acidity, sweet chocolate and floral notes.
This is a grade 2 washed coffee from Uraga washing station in Guji region of Ethiopia, produced by smallholders and processed at washing stations.
The cherries are delivered to the wet-mill for de-pulping and sorting, before the fermentation process for 36-48 hours, depending on climate conditions.
After the fermentation, the parchment coffee is thoroughly washed and density graded proceeding to sun drying process on African raised beds for 12-15 days until optimal moisture level reached.
To ensure a consistent drying process, The parchment is raked and turned periodically. Once the coffee has dried to the ideal moisture content level it is transferred for dry-milling, grading and sorting to be exported.
Ethiopia is the primary center of origin of the Arabica coffee plant and one of the largest countries in Africa which is bordered by Somalia, Kenya, Sudan & Eritrea.
For Ethiopian coffees, the Grade 2 signifies that the coffee is washed. The difference between Grade 1 and 2 is defined by the number of visible defects in the preparation of the green coffee.
Grade 1 – classification allows 0–3 defects which is very exclusive.
Grade 2 – classification allows 4–12 defects.
The quality of washed processed coffees is more consistent than that of unwashed coffees.
